The Catalina Birch series is a newer series of drums, made in Asia in the last 10 years or so. They're considered an entry/mid-level series. Your 1980s Gretsch drums, on the other hand, are top-of-the-line American drums, and they're made of different wood, so they'll have different tones.
As for whether it's ok to mix and match: do whatever your ears tell you! I love the sound of 10" toms, but they weren't making them in the 1950s when my Gretsch kit was made. So I found a modern Gretsch Catalina Maple 10" tom, wrapped it to match my 50s drums, and added it to the kit. It's not vintage and the badge doesn't match the rest of my drums, but in the end these are musical instruments and they're meant to be played. As long as you don't do anything that would affect the value of your drums (refinishing them, drilling new holes, etc.), I say do whatever sounds, feels and looks good to you. Enjoy!
