For some reason, I can't see the pictures you posted. But based on the comments, they appear to be in great shape. It's good that you want to keep them for continued use.
If and when you want to clean them up/detail them, do not use any type of steel wool. CryBaby I know you mentioned using new replacement parts, but at least get some prices for the original parts you need. You'll be surprised there might be very little difference between original/used and "new". Plus, new might require you to drill, which could be a bad thing (according to who you talk to). Personally, in the long run, I think you'll be happier with original/used replacement parts. It will look better and your eyes will constantly catch a glimse of the mismatched pieces. Plus, prices for used original parts will continue to increase and the supply will continue to decrease. The parts you need can all be purchased through the wanted section on this forum.
As far as the holes, yes dowel rod can be used. If the holes are all about the same size, then just get a piece of dowel rod that is a bit bigger. Then clean up each hole with a drill bit that makes the dowel rod fit snug and use wood glue to secure. You can patch the wrap with a donor piece of wrap. I'm sure someone on the forum has a spare piece they would be able sell/donate. I've used a paper punch to make perfect wrap patch circles. Take your time when doing this, because it can get tedious. Especially since you have 10+ holes to patch.
Like I said, I can't see the pictures, but based on the comments and if you use original parts, I would guess your 3 piece kit could fetch $900+.
