I'll give my interpretation of those terms below, but here's an idea... How 'bout posting the brand/model/size of your drums and what kind of sound you're going for? That way you'll get some opinions and suggestions on heads from folks who are hopefully a little less biased than Evans' marketing team. ;)
Attack = How pronounced the initial sound of a note is. Is it like a quick, sharp jab? (Evans' web site calls this "defined".) Or is it a bit mellower?
Sustain = How long the head sustains a note. When you hit the drum, does it go "BOOM" or "BOOOOOOooooooooooooommmmmm".
Tone = Kinda hard to explain it, but it's easy to hear. At a given pitch, how "bright" does the head sound? Does it sound clear and open or does it have a little bit more warmth to the sound?
Durability = I think this one's pretty self-explanatory.
