Sizes can very with me but, 1 on top, 2 on the floor. As in one mounted tom and two floor toms.

For the jamhole, I'm leaning toward a pearl icon drum rack with 8-10-12-13-14-15-16-18-22-with a 24 on the side for anyone that wants a larger kick and maybe have a 20 in the closet,

That will certainly cover all your options. I like the rack idea and I wish they were not out of favor with most guys these days as it would make quick change-overs so much faster. Plus you can put gear in places you simply cannot with bass drum mounts or toms on cymbal or snare stands. Ahh the fashion police....
Keep in mind the amount of time it will take to swap all those drums around. I don't know if you are running multiple acts a night but if someone really wants 6-7 mounted toms and wants to swap or add a bass drum, that is a lot of time in change-over. That's why the four tom set-up I suggested is so popular; we can reconfigure for pretty much any drummer in about 2-3 minutes at the most with them being sound checked and good to go - usually less. Just something to consider.

I have a Tama rockstar kit thats 10-12-14-16-22 with the 14 a hanging tom. and several vintage ludwig kist with multiple toms, but the hardware on the tamas is far superior to the luddys. The 14 works very well on a rack. I never liked hanging a tom of off a cymbal stand.
I have silver sparkle luddy kit 8-10-12-13-14-15-16-22-22-and a 24, and another silver luddy kit 10-12-13-14-16-18-24. These luddy kits have concert toms. The tamas have evans g2 coated on the toms and a emad

First, jamhole? is that a bar or a place you have control over like a house or barn or something? Frankly it reminds me of this girl I dated in college, but anyway…..
Dude! you are way too generous, if I guy can't be happy playing on a standard 22,12,13,16 or 22,10,12,16 or even a 22,13.16 then he should bring his own kit!!!!1
most places where I play that have a back line have 22,10,12,16 I always travel with one or two snares, a bass pedal, and cymbals.
Also I host a jazz fundraiser every year, 7-8 combos and I provide the back line, I bring an 18' bd, 10, 12, 14 and they better be happy!

I alrerady have the rack and plenty of clamps. Its not a problem for me to provide a killer drum kit for the jam hole. It's fun to me! lol I have all these drum kits sittin around collecting dust. The jamhole was started 8-9 yrs ago. It has grown, shrunk, and grown again. Its a suite next to my buiness. Rock power outfit from Ludwig. Double bass with two up, two down.
Hard to go back from a double bass kit honestly. Hate double pedals now.
While probably not a popular VDF choice, the Tama kit is probably your best bet for flexibility.
As for double pedal vs double bass drum; it simply depends on what you are trying to accomplish. If you have guys getting up to play a couple if songs or even 30 min, then taking out the time to set-up a double bass kit won't really be an option. If one band comes in, sound checks in the afternoon and then plays that night, then sure, they can play double bass, but I doubt that is what is happening at your venue.
To be fair, most of the pros are using double pedals these days with the general exception of the metal core, speed metal, death metal, progressive rock, etc. Plus, if you are mic'ing the kit that is one or two more inputs to deal with. Your engineer probably would not have accounted for that so he either has to move the entire mix down the board (a nightmare if you don't have digital desks) or he has kick drums on inputs 1, 2, 45, and 46. Of course, if you are not mic'ing then it doesn't matter.
